SPAM Dee-lite
12 oz can of SPAM or SPAM lite
18 oz canned sweet potatoes
8 oz can fruit cocktail
1 tsp cornstarch
2 tblsp brown
sugar
2 tblsp margarine
Arrange sweet potatoes in shallow casserole. Make 5 cuts partially through the SPAM and add to
casserole. Drain fruit (save juice). Combine cornstarch and brown sugar and stir into juice. Add margarine and
heat to boiling. Stir in fruit and simmer 5 minutes. Spoon over loaf and potatoes. Bake at 350 for about
30 minutes. Baste with juice while baking. Makes 4 small servings.
